Etienne Daulny owns 15 hectares of vines which are spread across a number of different soil profiles - the blending of which confers upon these wines a wonderful purity of varietal expression as well as a striking complexity.Clay and flint soils provide wines with great acidity and minerality, limestone yields up fruit with firmer structure and length whilst kimmeridgian clay and limestone soils provides further structure still.Skilled blending of these sometimes old vine plots and the resultant wines makes for a regular cuvee which balances Sauvigon freshness with an underlying, steely, minerally complexity and weight.Daulny also produce a wine from a single vineyard called Clos de Chaudenay, just above the village of Verdigny. With an average age of over 40 years and a fermentation that uses both stainless steel and aged oak, this is a rounder, richer style of Sancerre.
